No-Bake Crunch Bars

I don't know that I'd go so far as to call these "healthy", as the original recipe suggests, but they are gluten free, and vegan, and refined-sugar free. And also, deeeeeeelicious! I have now made these at least 4-5 times, and it took that long to take a picture of them before the pan was gone. Yummmmmm
Think muddy buddies without the powdered sugar. My roommates and I lived on muddy buddies freshman year. Yummmmmmm

No-Bake Crunch Bars


1 C peanut butter (crunchy or creamy)
1/2 C coconut oil
1/4 C cocoa powder
heaping 1/2 C honey (or maple syrup if vegan)
pinch salt
1/2 tsp vanilla
3 1/2 heaping C Rice Chex cereal

1. Lightly grease a 9x13 pan and set aside. The recipe calls for a 9x9 and I've usually made it that way, but they will go farther and be easier to eat when spread a little thinner. Plus they'll freeze faster. Win-win-win. 
2. In a medium saucepan add coconut oil and peanut butter until somewhat melted. Then add the cocoa powder, honey, salt, and vanilla and stir until combined and a smooth consistency. 
3. Stir in Rice Chex cereal until it's all coated. You can add more chex if you feel, the bars in the pictures above have a little more than is desirable. 
4. Pour in prepared pans, freeze for 15 minutes or so until firm. Don't eat it until it has set!! You'll be glad you waited. Good things come to those who wait.
