So maybe it's been a while since I've baked anything new and blogged about it. And you really might not believe me if I told you just how many batches of the last recipe, the unbeatable chocolate bark, I've made and consumed in the last 6 months. Maybe part of me wondered if I really needed another sugar-free dessert, and maybe part of me was too lazy. But when I found this recipe that is basically like chocolate bark, but with double the sweetener, thicker, and with peanut butter, I knew things were just about to get better.
With ingredients like these, magic is about to happen.
It's easy, fast, and doesn't have to be cooked! I used agave, but maple syrup is in the original recipe. Either is great but I do not recommend honey.
I used peanut butter in mine, but you can use any nut butter. I think another nut butter would've been less powerful in the overall flavor of the fudge, but I love peanut butter so I'm not complaining. Also I used pecans instead of the called-for walnuts, and I think either is great!
Not even I could eat more than a few tiny squares of this at a time...and that's really saying something! This is great stuff. It's just like fudge in all ways, except no sugar, sweetened-condensed milk, butter, or nasties.

Sugar-Free Freezer Fudge
Oh She Glows
1/2 C coconut oil
1/4 C natural nut butter of choice
1/2 C cocoa powder
1/2 C maple syrup or honey
1 T vanilla
pinch fine grain sea salt
3/4 C nuts of choice, roughly chopped
1. With electric beaters, beat together the coconut oil and nut butter.
2. Sift in the cocoa powder and beat again until combined.
3. Pour in the maple syrup, vanilla, and salt and beat until smooth.
4. Stir in the nuts.
5. Line a loaf pan with a piece of parchment paper or tin foil. Scoop the chocolate mixture into the pan and spread out until even. I took another handful of nuts, broke them up, and sprinkled over the top of the fudge for extra crunch and good looks.
6. Freeze uncovered for about 1 hour, or until solid. Slice into small squares and prepare to be comatose.
