Almond Flour Brownies

These are the alleged brownies that basically changed my life when I took my first bite in Canada. These gluten-free, sugar-free, dairy-free brownies will fool even the most avid of sugar junkies. They are unbelievably rich and delicious!
 I realized I literally didn't take any pictures of these brownies after they were cooked. Wow. Just know that these brownies changed my life. It them with a little coconut whipped cream, and they are complete.

Almond Flour Brownies

From Rach...

2/3 C honey
1/2 C coconut oil
1 T vanilla
3 eggs
1 C almond flour
1/2 C unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp salt

1. Heat oven to 350
2. Mix wet ingredients together
3. Mix dry ingredients, then combine wet and dry. 
4. Bake for 30-35 minutes in an 8x8 pan. Top with coconut whipped cream (optional) and serve!

Coconut Whipped Cream

Oh She Glows

1 can full-fat coconut milk (this is really important. You can't whip fat that's not there)

1. Turn the can upside down and put it in the refrigerator OVERNIGHT.
2. Turn it back around, open it and scoop out the fat. Add a bit of vanilla and whip until it's the consistency of whipped cream. Keep it chilled if you don't use it right away.
3. Stuff your face.
